Stéphane MONTAMAT sells his cheeses at the markets in Auriac, Puylaurens, Caraman, Saverdun, Revel, Montgiscard. He matures his cheeses and offers them to his customers only when they are mature, because they gain in aroma, flavor and fragrance compared to younger cheeses. He received the Mercure d'or in 2007 (award attributed each year by the Secretary of State for Commerce to the best merchants in France for their know-how and the evolution of their business).
