The Hôtel de France in Castelnaudary has been making cassoulet for more than a century. It is served at the restaurant, but since 1998 it is also sold online. The sausage (pork meat from Aveyron) and the goose confit (from Périgord) are homemade. The beans come from Castelnaudary, of course.
